This tradition began when the company installed its first roaster at their Collingwood malthouse in 1926. Today, the Specialty Product Centre, with its state of the art Barth roasters, is located in Ballarat which is the spiritual home of Joe White Maltings – a reminder for all in our company of the historical association of Joe White and great beer! |

| Base Malts |
| Pilsner Malt:3.0 – 4.0 EBC This is a very pale malt made from plump two row barley. It is delicately flavoured malt which is lightly kilned to match the characteristics of European pilsners. Produces pale gold beer with a malty, slightly biscuit like flavour. |
| Premium Signature Malts |
| Signature : Brewer’s Pilsner Malt: EBC 2.5-3.5 Signature : Ale Malt(Brewer’s Malt) : EBC 4.5-6.5 Signature : Distiller’s Malt(Pilsner): EBC 2.5-4.0 Signature Malt is a no-compromise malt designed from start to finish specifically for Australian craft breweries. It starts by selecting the best barley in the country from the best performing region. In this inaugural year we have selected LaTrobe barley from a single farm in NSW. Working to a redesigned specification, this parcel of barley will be malted in one plant by a dedicated team of maltsters. By eliminating or controlling as many variables as possible, we ensure that Signature Malt delivers an extra level of performance and reliability. |
| Specialty Malts |
| Cara Malt : EBC 40-70 Is the lightest of the crystal malts, with its brilliant golden colour and full caramel flavour. It is made from green malt, but is roasted at lower temperatures and for a shorter time than typical crystal malt. Light Crystal Malt: EBC 100-140 Relatively new on the market, Joe White Light Crystal is the closest thing in Australia to the relatively common specification of 40o Lovibond crystal malts used widely in recipes around the world. It is Ideal as a 1-2% addition to west coast American IPAs or as a dextrine donor in light golden colour beers where subtle crystal malt character is required. This grain can be steeped for use with extract or kit brews. Medium Crystal Malt: EBC 140-160 Crystal malt contributes to the flavour, colour, head-retention and storage capabilities of beer. Crystal is made from fully germinated barley (green malt). Starch is converted into sugars during the roasting process, resulting in a crystalline endosperm, hence the name crystal malt has a distinctive sweet flavour. Dark Crystal Malt: EBC 250-300 Extra Dark Crystal Malt: EBC 350-450 With colour varying from a light, honey shade to a deep gold depending on the length of the final roasting stage, Joe White Maltings’ Dark Crystal Malt provides sweet caramel and toffee flavours as well as contributing to body, foam stability and storage capabilities of beer. |
| Roasted Malts |
| Amber: 30-60EBC Amber malt is the lightest of the roasted malts. The malt has a biscuity flavour and a subtle ochre colour. Chocolate Malt: 500-800EBC Similar in colour to the roasted barley, the roasted malts include the Chocolate, Brown and Black Malts. Roasted malts are made from pale malts that have already been through the complete malting process of steeping, germination and kilning. Consequently they impart a lightly smoother flavour than roasted barley. Light Roasted Malt: 800-1000 EBC Dark Roasted Malt: 1200-1400 EBC The length and temperature of the roasting process will affect the colour and flavour profile, with the darkest roasts being almost black in colour and having the most bitter, dry taste. Black Malt: 1400-1600 EBC The darkest of the roast products, providing a deep brown-black colour, Black Malt has a mild aroma while still providing a dry, bitter, burnt-coffee flavour. Roasted Barley: 1200-1500EBC Ideal for the darkest ales, stouts and porters. Has a rich black colour and slightly astringent flavour. |
| Wheats |
| Wheat Malt:3.5-5.0 EBC Ideal for: Weissbier, Witbier, Lambic, Berliner, Weisse and Gose Premium White Wheat is malted in the same way as barley and is used as a base malt in the production of classic wheat beers. At lower percentages of the grist, wheat malt can also be added to any number of beer styles to enhance foam stability and mouthfeel. Crystal Wheat Malt:EBC 100-150 Ideal for: Any type of beer, from golden lagers to darker ales Producing beautiful dark golden tones, Crystal Wheat Malt provides a smooth nutty profile with mild notes of caramel and biscuit. Used to enhance foam retention and mouthfeel while providing a clean finish to any beer style. Roasted Wheat Malt: EBC 1200-1600 Ideal for: Stouts With a milder flavour than both Black Malt and Roasted Barley, Roasted Wheat Malt is used mainly for colouring and improving the body of dark beers. Raw Wheat Raw wheat produces beers less sweet and full bodied than those made with malted wheat, making it an excellent choice for more crisp and refreshing styles. Higher protein levels of wheat greatly enhance its contribution to foam stability and increase the beer’s mouthfeel. |
