Torrified Wheat is short for Insta Grains® Soft Red Wheat Whole Kernel. Heat treated to break the cellular structure, allowing more rapid hydration and malt enzymes to more completely attack the starches and protein. Use up to 40% of the total grist bill. Great in Wits and for head retention of all beer styles. If you use more than 20% wheat, we recommend using rice hulls to avoid stuck mashes.
Used to improve body and head retention and add a crisp finish in many British ales. Can also replace raw wheat in Belgian recipes.
